If you are not a fan of garlic, you can use less, or omit it altogether. Substitute other spices, to suit your taste.
1 cup broken spaghetti [1" pieces]
1 Tbs oil
3 cloves garlic, peeled and finely minced
3 cups veg'n 'chicken' flavor vegetable broth
Salt and pepper to taste
Shredded coconut (optional)
In a heavy frying pan, heat oil over medium heat.
Add garlic, and saute` until fragrant, but not brown.
Add spaghetti pieces, and stir-cook until light brown.
Stir in broth.
Bring to boil. Turn down to simmer.
Simmer, partially covered, until broth is absorbed.
[If broth is absorbed before spaghetti is tender, add more broth, a little at a time, and cook until spaghetti is tender. If spaghetti is tender before broth is absorbed, cook a little longer, stirring often.]
Add salt and pepper to taste.
Garnish with coconut, if desired.
